Participants will explore the role of gluten in BROW grains, which include barley, rye, oats, and wheat, and learn how its absence changes the science of baking. The session includes practical label reading skills with clear guidance on the difference between standard FDA language and the more rigorous Certified Gluten Free standards at ten parts per million.
The workshop also covers common hidden sources of gluten, such as malt, traditional soy sauce, and brewer’s yeast, along with strategies for recognizing cross-contamination risks in shared kitchens and restaurants. By the end of the evening, attendees will leave with the tools needed to navigate a gluten free lifestyle safely and successfully.
